This is a similar recipe to the bites my sister is serving up at Root House Coffee in Pagosa Springs, CO. They are so yum.
Energy Bites:
1 cup old-fashioned oats
1/2 cup nut butter (almond butter or peanut butter)
1/2 cup ground flax seed
1/2 cup chocolate chips
1/3 cup honey
2 tablespoons chia seeds
1 teaspoon vanilla extract
*Sprinkle a little sea salt up there too…to taste! (forgot to mention this part on podcast)
Combine oats, peanut butter, ground flax seed, chocolate chips, honey, chia seeds, and vanilla extract together in a bowl. Roll into 1 inch balls (makes about 20). Store in the fridge!
